I admit that I feel torn about the amount of treats that they can be exposed to between our house and the grandparents home, so I try to fill the eggs with a balance of gummies, almonds, dark chocolate and coins:) I love the egg-hunt too much to give that up!
We will spend Easter Sunday at my parents house enjoying traditional Polish food. My mother will cook a traditional white Borscht, sausages and potatoes. It's the one time of year we enjoy this meal, so I really do love it. I'm always responsible for making the dessert. I LOVE this task because it gives me the freedom to try new recipes - I try to make a couple different things because my dad is allergic to eggs, so I usually make something that he can enjoy as well.
Here are two of my favorites - the cake has eggs, but the raw cookie dough balls do not.

This Quinoa Carrot Cake is so moist and delicious. Gluten-free and flourless means it won't sick like a rock in your belly. The pineapple and carrot combo so well together. You can use a variety of icing options on - traditional cream cheese frosting OR a nice light coconut cream will be perfect!

My other favorite, no-bake dessert for Spring is this raw Lemon Cashew Cookie Dough Ball.
This dessert is light and tangy and so easy to make. You'll want to eat it right out of the bowl, but have some class and roll it into balls before consuming:) Serving a couple of these treats with your afternoon tea or coffee will feel like a real treat. These are one of my all-time favorites!
